Watermelon Slices with Lime-Honey Syrup

Ingredients

  • 1 c. fresh lime juice (from 6 to 7 limes)
  • ¼ c. honey
  • 1 ripe watermelon (about 12 lbs.), chilled, quartered lengthwise, and cut into thick slices

Directions

  1.   In 2-quart saucepan, heat lime juice and honey to boiling on high, stirring occasionally. Boil 2 minutes. Remove from heat. Transfer to small bowl and refrigerate until cold . Syrup can be refrigerated up to 1 day ahead.
  2. Place watermelon slices on large platter. Drizzle with lime syrup and serve immediately.
